Ember & Tallow opens kitchen at Funk Brewshed in the Swan Valley

Ember & Tallow has officially taken over the kitchen at Funk Brewshed. Wood-fired cooking driven by the seasons, local produce, and a touch of fun should be enough to tempt your palate, but if you need more reason to visit, it comes with a great story.

Ember & Tallow at Funk Brewshed is helmed by Chef Kristen Dugan, who was the venue’s original Venue Manager when Funk 2.0 opened in 2021. After helping set up the venue, Kristen returned as a hospitality consultant, and now she’s back running her own kitchen business on site.

For Martin Michael, Managing Director at Funk Drinks Co., outsourcing the kitchen to Kristen was a natural fit:

“Outsourcing the kitchen to Kristen was a no-brainer. She understands everything Funk stands for, aligns with our healthy ethos, and is a fantastic operator. We wanted to offer our visitors exceptional food, but as beverage producers, it’s great to focus on what we do best: natural, preservative-free drinks, while knowing someone close to our hearts is firing up incredible dishes in the kitchen! Plus, I think customers will be thrilled that the Cider Battered Cauliflower and Pork Belly Bites are back on the menu.”

Kristen is a Swan Valley local with a passion for supporting her community and creating a direct link between food, produce, and people. After leaving her venue management role at Funk in 2022, she launched her catering business, Fingers & Forks, running the kitchen at a local bowls club and catering local events.

Ember & Tallow marks an exciting new chapter, celebrating the best WA produce with house-made pickles and ferments, Funk drinks infused into glazes, and tallow-fried favourites for that rich, golden crunch. The menu is generous, wholesome, and shaped by fire offering classic brewpub fare alongside elevated choices like Cider-Cured Salmon Gravlax and the Butcher’s Cut special.

The main fryers run on beef tallow in line with Funk's values, but dietary requirements are well looked after: a separate fryer strictly dedicated to gluten-free and vegetarian items ensures everyone is covered.

Weekly Highlights:

  • Friday Nights: The smoker takes center stage with a $75 Smoked Meats Platter (serves two).

  • Saturdays: 2 hours of all-you-can-eat wings starting at 4:00 PM.

  • Saturday Nights: Woodfired premium steak selection (starts 5:30 PM, pre-orders only).

  • Sundays: Live music from 2:00 PM.

Opening Hours:

  • Friday & Saturday: 11:00 AM – 9:00 PM

  • Sunday: 11:00 AM – 5:00 PM (Kitchen closes 1 hour prior to venue close)
